Here are some saucey summer entertaining ideas:

RUSTIC SOYA MAPLE GLAZED CEDAR SALMON

A fabulous sweet and salty glaze basted on salmon as it grills on cedar planks. The quick and easy glaze can be used on chicken, quality grade B, pure maple syrup makes all the difference, and on pork as well.

Original Recipe Yield 1 side of salmon
Ingredients
• 1 untreated cedar plank
• 2 1/2 pounds boneless salmon fillet
• 1 teaspoon coarse salt
• 1/2 teaspoon black pepper
• 1 Bottle Simply West Coast RUSTIC SOYA MAPLE GLAZE
• 2 tablespoons chopped fresh chives
• 6 lemon wedges

Directions
• Soak the cedar plank in water for 2 hours.

• Preheat an outdoor grill for medium-high heat and lightly oil grate. Place the cedar plank across the grate of the grill as it preheats.

• Season the salmon fillet with salt and pepper, and place onto the hot cedar plank skin-side down. Close the lid on the grill, and whisk together the ½ cup Simply West Coast RUSTIC SOYA MAPLE GLAZE with 1 tablespoon mayonnaise. Baste the salmon with the glaze, and continue cooking until the salmon flakes easily with a fork, about 10 minutes total. Serve the salmon garnished with chopped fresh chives and lemon wedges.

Rustic Soya Maple Glaze

Slowly brush Halibut with glaze while baking or grilling.

Lemon Champagne Vinaigrette

Mix fresh dill with 1/2 cup of vinaigrette and coat Halibut. Bake in casserole dish, covered with tinfoil.  Makes a yummy caramelized meal.

Classic Tartar Sauce

Spread sauce over Halibut or favorite fish and bake until it flakes apart with a fork. Squeeze fresh lime juice over before serving.

Tangy Thai Aioli

Dollop on top of grilled or baked fish.  Great with fish ‘n’ chips too!

Our featured sauce this week and recipe is made with our deceptively complex and perfect for salads or as a white fish marinade Simply West Coast Modest Miso Vinaigrette

 Modest Miso Scallops And Soba

 Ingredients

  • 1 tablespoon chopped ginger root
  • 1 tablespoon garlic
  • vegetable oil
  • 300 g soba noodles (or noodle of preference)
  • 35 asparagus spears
  • About 15-20  good sized scallops
  • Pinch of salt and pepper
  • 1/2 cup shiitake mushrooms, sliced
  • 3 scallions, chopped
  • Simply West Coast Modest Miso Vinaigrette

Directions

1.         Boil noodles and rinse with cold water, set aside.

2.         Heat 2-3 tbsp of oil in a skillet over medium heat.

3.         Stir fry shitake mushrooms and asparagus with ginger for 3 to 5 minutes and set aside.

4.         Add another healthy splash of oil to the same skillet, and grill the scallops for about 1-2 minutes per side, until cooked.

5.         Place noodles on plates, top with asparagus, shitake, and scallops, and drizzle with Simply West Coast Modest Miso Vinaigrette. Garnish with scallions and serve!

Modest Miso Lotus Root Stirfry

This easy and versatile recipe is great as a vegetarian dish or add your favorite meat, fish, or tofu!

Ingredients

  • ½ cup Simply West Coast Modest Miso Vinaigrette
  • 1/8 cup water
  • lotus root, washed, peeled, and sliced
  • 1 carrot, sliced
  • 250 grams snow peas,  washed
  • 5 pcs dried shiitake mushrooms, softened, drained
  • 1 red bell pepper, sliced
  • 2 tablespoons vegetable oil
  • 4 tablespoon chopped garlic
  • 1/2 onion, chopped
  • 1 tablespoon fresh chopped ginger root

Directions

  1. Heat oil in a wok or frying pan. Add in the ginger, stir fry for 15-30 seconds. Add in the   onions and garlic. Fry until onion is soft.
  1. Combine carrots and drained shiitake mushrooms in the pan. Cook for about a minute or two.
  1. Add red bell pepper, snow peas and sliced lotus root. Stir fry for another 1-2 minutes.
  1. Add in the water and Modest Miso sauce. Stir fry for another 1-2 minutes.

Keep it vegetarian or add your favorite meat, fish, or tofu!

Or…..

Pour into an Asian-inspired salad. As a marinade, soak fresh or frozen fish in the fridge and marinate for 1 hour. Or for a bolder flavour, marinate overnight. Grill. Finish with toasted sesame seeds.

Baked Tilapia With Broccoli Quinoa & Tempting Teriyaki Marinade

 Tilapia fish originated in the Nile River, and have been enjoyed for thousands of years. This is a fantastic fish for many reasons: low in fat, high in nutritional value, and inexpensive compared to many other fish! Here is an easy, delicious, and nutritious recipe for Tilapia and a yummy side dish that can be enjoyed year-round.

Ingredients

  • 4 tilapia fillets, (around 120 grams/4 oz each)
  • 1 lemon, sliced
  • Simply West Coast Tempting Teriyaki Marinade

Directions

1.         Place tilapia fillets in a shallow dish, cover with Simply West Coast Tempting Teriyaki Marinade, and marinate for 1-2 hours.

2.         Lightly grease a baking dish and heat oven to 350 degrees

3.         Arrange the tilapia fillets in the bottom of a baking dish, skin side up. Add Tempting Teriyaki Marinade so that the flesh of the fish is covered.

4.         Cover and bake for 20-30 minutes in the oven, or until you are able to flake fish with a  fork.

5.         Serve with a squeeze of lemon to taste

Or…..

Marinate with any seafood, meat or vegetables for a sweet and savoury experience

Our featured sauce this week and recipe is made with Simply West Coast Swingin’ Cocktail Sauce … A suggestive partner for shrimp…..

Cocktail Crab Dip

Ingredients:

  • 8 oz package cream cheese, softened
  • 6 oz canned or fresh crab meat, drained
  • ½ cup Simply West Coast Swingin’ Cocktail sauce
  • Juice of 1 lemon

Directions:

1.         Spread cream cheese over a serving dish

2.         Add Simply West Coast Swingin’ Cocktail sauce, spread evenly.

3.         Layer the crab meat and sprinkle with lemon juice

4.         Cover and chill for 10-15 minutes. Serve with crackers or hearty sourdough bread.

Or…..

 Pour cocktail sauce in your best bowl and surround with juicy lemon wedges and fresh parsley. Dip or dunk cooked shellfish in and savour.

Simply West Coast Rustic Soya Maple Glaze & Chili Garlic BBQ Salmon

Ingredients:

 •           ¼ Simply West Coast RUSTIC SOYA MAPLE GLAZE

•           2 lb. whole pink fresh salmon

•           1 tbsp chopped ginger

•           1 garlic clove

•           Juice zest of 1 lime

•           2 – 3 green onions, chopped
Directions:

 •           Preheat barbecue to high heat.

•           Rinse the salmon under cold water and pat dry. Trim off the tail and fins.

•           Make several shallow cuts through the skin.

•           Place on 3 large, slightly overlapping sheets of aluminum foil.

•           Combine the remaining ingredients, except green onions, in a small bowl; spoon over the salmon. Fold the foil over the salmon and crimp the edges to seal.

•           Place the package on one side of the barbecue and turn the heat off directly underneath it.

•           Close the lid and cook 25 to 30 minutes, or until cooked.

•           Open the foil and carefully transfer the salmon to a platter.

•           Carefully pour any juices in the foil over top.

•           Sprinkle with green onions and serve.

Or…..

Drizzle generously over hot grilled salmon. Experiment with other seafood, chicken, tofu, pork or veggies. Pair with fresh baked bread and a light salad.  The pure maple syrup, used in this sauce, really makes all the difference!

Our featured sauce this week and recipe is made with our zesty Simply West Coast Tangy Thai Aioli – a spicy, creamy sauce you can’t live without!

Tangy Thai Crab Rollups

Ingredients

  • ½ cup cooked crab meat
  • ½ cup shredded cabbage
  • ½ cup shredded carrots
  • ¼ cup chopped cilantro
  • 2 stalks green onions, sliced
  • ½ avocado, sliced
  • Simply West Coast Tangy Thai Aioli
  • 4-6 rice paper wrappers

Directions

 1.         In a bowl, mix together crab, cabbage, carrots, cilantro, and green onions.

2.         Dip rice paper in a warm bowl of water until soft (but not soggy). Place on work surface such as a plate or cutting board.

3.         Place 1/4 cup of filling on rice paper, top with avocado and a drizzle of Simply West Coast Tangy Thai Aioli.

4.         Fold in sides of rice paper and roll until all the filling is securely held inside the  wrapper.

5.         Cut each roll in half and serve.

6.         Enjoy!
